EGUSI SOUP

Nigeria is a big country with over 250 indigenous tribes in existence, every tribe has at least one special meal that Is unique to them. EGUSI soup is made from egusi melon seeds which are found in tropical parts of Nigeria.

EGUSI soup (from youruba) is also know as agusi,ohue,ikpan, agusi or ikon depending on the tribe. Egusi is not necessarily a Yoruba soup, it is eaten by west Africans from Igbo tribe in Nigeria all the way to Ghana where is it called "Agushie". 

However, the fact remains that the soup is cooked using diverse methods from Edo people who cook theirs with une (locust beans) and water leaf to the broth like Agushi soup, popular amongst the northerners.

Here is one of many ways of how Egusi is made, this style is common among the Yoruba people.

INGREDIENTS:

Melon seeds (blend till smooth)

Pepper (scotch bonnet and tatashe, blend it with the egusi seeds)

Beef, turkey, chicken or fish (wash and boil with seasoning)

Onions

Panla fish (wash with warm water)

Ponmo

Palm oil

Salt 

Seasoning .

HOW TO COOK.

STEP 1: Add palm oil into a clean pot placed on a gas cooker, bleach the oil a little before adding your blended onions, stir before adding your mixture of blended egusi and pepper. Add salt and seasoning before covering the pot.

STEP 2: Open your pot after 2 minutes, stir your egusi, add your turkey, chicken or meat, add panla and ponmo too. Give it a little stir and cover your pot. Reduce the heat and wait for about 1 minute.

Egusi soup is ready, serve with Eba or any swallow of your choice with a chilled juice to accompany the food in your stomach.
